The principals behind Simone's started considering properties in 2007, finally settling on a Pilsen building that occupies a double lot at the northwest corner of 18th and Morgan streets.

The company Alter Ego Form was contracted to provide conceptual design, interior design and fabrication services for the build-out of the space. Pictured here is one of their early illustrations showing a potential concept for the main entrance of Simone's. As it turns out, this design concept wasn't employed for the final version of the entrance, but it illustrates how our designers have been intimiately integrated into the process of building out Simone's.
Leveling and replacing the floor of Simone's was one of the early infrastructure improvements made to the space.
